This delicious recipe was first introduced to me by a very good friend Debbie Jean and has since become one of my favorite sweet treats! It is super easy to make and is an incredible energy booster  - remember to keep it in the fridge!
 
Ingredients:
  • 1 cup pitted dates
  • 1 cup mixed nuts, broken in to smaller chunks
  • 1/4 cup dried cranberries cut in to smaller pieces
  • 1/2 cup coconut oil, melted
  • 3/4 cup unsweetened cacao powder

Directions:

  1. Line a 20cm x 20cm square dish with wax paper
  2. Soak your dates in a little warm water for an hour or 2 till they are soft. Rinse rise them and pop them in the blender (food processor)
  3. Add the coconut oil and cacao powder, and pulse until super smooth
  4. Transfer to a mixing bowl and mix in the nuts and chopped cranberries
  5. Transfer to your lined dish and pop in the fridge until set. You can then cut them in to blocks. Store them in the fridge or freezer
