Who does not love a sweet treat?
Sometimes, when the sweet craving hits, it hits hard! And there is probably nothing better than a creamy piece of fudge to sooth that craving.
A lovely lady by the name of Debbie Christy was kind enough to share her fudge recipe with the Living Out the Box fans!
Vegan Fudge
2 x 200g Tins of Natures Charm Coconut Condensed Milk
2 Cups Castor Sugar
2 tsp Syrup
100g Flora Vegan Margarine
½ Cup Nut Milk (I used almond)
1 tsp vanilla essence
Method
Put all the ingredients (except the vanilla essence) in a heavy pot and bring to the boil.
Boil, stirring constantly for 20 minutes.
Remove from heat, add 1 tsp vanilla essence and beat vigorously with an electric beater.
The mixture is still shiny and sticky.
After about 5 minutes of beating, the mixture will become more “matt” and much thicker. It will start to look fudgy.
Pour and scrape into a greased pan, flatten out and allow to cool. Cut into squares when it is almost set.
You can alternatively make your own condensed milk by blending the following 1 and 1/4 cups SoyMilk Powder, 3/4 cup Sugar, 1/2 cup Hot Water, 2 Tbsp Coconut Oil and 1/4 tsp Salt And then use this mixture in the recipe in place of the Nature’s Choice condensed milk.
